Thai Green Curry – a quick and easy recipe

Pork Green Curry served with Steamed Rice

 

This one is not from scratch. But, it is easy, quick and delicious. I made this with thinly sliced beef but you can make it with chicken and pork. I used a Green curry paste that can be found in any Asian grocery stores or the Asian section of larger grocery stores. How much of the paste you use is dependent on how spicy you like your curry.

Quick shopping list:

1 1/2 lbs. thinly sliced beef

1 Large red onion (thinly sliced)

1 can of green curry paste

A bunch of Thai Basil

1 can of coconut milk

Directions:

– Heat 2 tbsp. of oil in a pot

– Add the onions, half a bunch of Thai basil and the slices of beef to the oil and saute until the meat is nicely browned

– Add a Can of the Green Curry paste and continue to saute the meat

– Add the can of coconut milk and a can of water

Bring to boil then simmer

Serve over steamed rice.

Really, it is that simple!
