Strawberry Cake with homemade icing – easy, quick and yummy.

Here is a recipe for strawberry cake from cook.com (http://www.cooks.com/rec/view/0,196,133185-242193,00.html) that I personalized with some minor modifications. It is super easy, extremely tasty and looks great too. It starts with a box mix and is really a great recipe for a working mother like me.

SHOPPING LIST FOR THE CAKE

1 package of your favourite yellow or butter cake mix

1 package of Strawberry gelatin

1 cup of fresh strawberries (sliced)

1/2 cup of water

I cup of oil

4 eggs

Directions for Baking the Cake:

Mix Jell-o and cake mix together. Add water and oil; mix really well using an electric mixer. Add eggs, one at a time, beating well. Add sliced strawberries. I love strawberries so I added a little more than the recipe called for.

Bake at 325°F. for 30-45 minutes in greased and floured 9×13-inch baking pan.

Once the cake is done, let it cool and then cover it with the icing. if you make a round cake, you also layer it, using the icing as a filling.

MAKING THE ICING

1 pound powdered sugar
1/2 cup butter, melted
1/2 – 1 cup fresh strawberries (sliced)

Cream the melted butter and sugar until nice and smooth. Start with 1/4 cup of butter and work your way up.The original recipe called for 1/4 cup of butter melted but I really could not make that work well enough to cream it. So, I ended up using closer to 1/2 cup of butter. Once your icing is smooth, add the strawberries into and mix it a little more. You just don’t want the strawberries too chunky.

Spread it on the cake or if you like you can use it as filling for a layered cake. I am sure it will work just fine with cupcakes as well.

I cut a slice with a heart shaped cookie cutter – perfect for Valentine’s Day or just for a treat any day.
