Thanksgiving 2009 – Roasted Fall Vegetable
ROASTED FALL VEGETABLES
This is my favourite side dish to any meal.
- Sweet Potatoes
- Bell Peppers
- Fresh rosemary
- Olive Oil
You slice the vegetable into similar sized pieces, place it on a large baking dish/cookie sheets, drizzle olive oil evenly over it, cover it with sprigs of fresh rosemary and roast it at 375 degrees for 45 mins. You can also add sliced red onions if you like. Wait for the potatoes and vegetables to slightly caramelize. You can easily add more vegetables if you like and adjust the qualities depending on what vegetables you like more of.
This is great dish to serve any day or time of year. It is super easy and absolutely delicious.
