Delicious Egg Scramble – quick dinner or breakfast

As a working mother who is usually frantically cooking dinner as soon as I get home, I often serve Breakfast for Dinner. It is quick and easy and lots of fun. My son loves breakfast food anytime of day so it ends up being an easy meal. Here is an easy recipe for an egg scramble and since it was at dinner time, I threw in some vegetables for good measure!

Ingredients:

4 Extra-Large Eggs

1 Red Bell Pepper (Sliced)

1 small onion (diced)

4 slices of bacon (chopped/diced)

A handful of chopped cilantro (Any other herb will do. parsley and basil work well too)

Directions:

– Place the bacon in a non-stick skillet with your bell pepper, onion and cilantro. Stir it around and have it slowly brown.

Meanwhile, break the eggs into a bowl and start whisking it.

Once the bacon is cooked and the rest of the ingredients have browned, add the well-whisked eggs into the skilled and scramble it. Once it is nice and fluffy, remove it quickly so it does not over-cook.

Served with toast or pancakes, this is a favorite at our house. It is quick, easy and quite delicious and perfect for the days when I walk in to endless questions as to when and what time dinner will be ready by my 6 year old.
