Greek Omelette


4 Farm Fresh Eggs (whisked)

2 stalks of green onions (diced)

1/4 of a bell pepper – any kind (Diced)

Parsley for garnish

Feta Cheese (1/2 cup)

Mozzarella Cheese (1/3 cup – shredded)


Heat a tablespoon of olive oil in an omelette pan or a regular non-stick pan. Add the green onions and the bell peppers and let it brown for a minute or two. Fold in the whisked eggs. add a teaspoon of salt and some pepper. After a couple of minutes add 1/2 the mozzarella cheese to the eggs. Cover the pan so it cooks faster. Once the omelette is ready fold it over. Cut in  slices before serving and garnish with parsley, shredded mozzarella and some feta cheese.
