Pan Fried Zucchini and Yellow Squash

One of the nicest summer experiences for me is the farmers market.  I love the colors, the people and the wonderful vegetables available. In the office, there are also many farmers wanna-be who bring in plenty of zucchini and squash. This is an easy and delicious recipe that does nothing to hide the flavors of the vegetable. It is also a favourite with the whole family including my son who likes the bright yellow squash. This is a great side dish which can be served with meal.


2 green zucchini (sliced)

2 yellow squash (sliced)

2 garlic cloves (sliced)

Salt and pepper

2 – 3 tablespoons of olive oil

Sliced zucchini and yellow squash


In a large skillet, heat the olive oil and add the garlic to it. As it slightly browns, add the squash and zucchini. Arrange it around the skillet and let it brown. turn it around so all the squash and zucchini has an opportunity to brown. Cover the dish until it softens. Feel free to add more olive oil if you need to. Salt and pepper it to taste. This is done when the vegetables are cooked. Do not overcook lest you lose the taste of the veggies.

Serve with freshly grated parmesan if you like parmesan. It is not necessary.
