Ginger Garlic Minced Pork Soup
This soup is definitely our go-to dinner option on a cold evening. It is simple to prepare and is has a wonderful array of Chinese flavors to it.
2 lbs Ground pork
2 quarts of chicken stock
3 garlic cloves diced (or 2 tablespoons of already diced garlic in a jar)
2 medium sized onions – finely diced
1 small piece of ginger diced (I table spoon)
2 tablespoons sesame oil
2 tablespoon oyster sauce
2 halved Potatoes (optional)
- In a large bowl, place the ground pork and break it up a little with a fork. Add the sesame oil, oyster sauce and 2 tablespoons of diced onions. Mix it in really well with a fork.
- In a large pan, starting warming the chicken stock. Once it comes to a boil, add the remainder of the onions, garlic and ginger. (if you like potatoes in your soup, you can add it now).Keep it boiling for another 10 – 15 minutes. Then add the marinated pork in to boiling soup with a tablespoon at a time. (make sure potatoes are cooked if you are adding them)
- Bring the soup to a boil for another 10 minutes. Turn off the heat and keep the soup covered for another few minutes.
- You can serve with rice or just have by itself.
