Creamy Potato Beef Stew

This has to be the easiest recipe for making a beef and potato soup.  It is literally a matter of browning all the ingredients and then allowing it to slow cook for an hour on low heat! Seriously easy recipe.



2 lbs steak tips or stewing beef

2 Leeks (sliced fine)

1 cup diced cilantro

2 large white onions (sliced or diced)

5 garlic cloves

1/4 cup olive oil

4 large potatoes (quartered)

6 – 8 cups chicken stock



  1. In a large pot, start heating 1/4 cup of olive oil. Throw in the leeks, diced onions, garlic cloves and the beef. Let it slowly brown and caramelize. Add in some salt to season it. When the beef is turning a lovely brown, add the cilantro and potatoes. Stir it all in really well.
  2. Add 6 – 8 cups of chicken stock to the mixture. Cook it on low heat for close to an hour. When the meat is really nice and tender, add 1/2 cup of heavy whipping cream to the soup and stir it in. Really, truly as easy as all that!
